Weeknight dinner #8 - Chicken tacos.


It's been awhile since I've posted one of these. After realizing I hadn't left the house in a couple days, I took to Wegmans to stretch my legs and search for dinner inspiration. Since it was Tuesday, tacos seemed like an obvious choice. How this one came together I'm still not sure but it got rave reviews from the peanut gallery. 


  • Corn tortillas 
  • Rotisserie chicken, pulled 
  • Red cabbage, shredded 
  • Black bean dip 
  • Shredded cheese (I used Gruyere)


  1. Lay out your tortillas and smear 1 teaspoon of black bean dip on each. 
  2. Layer pulled rotisserie chicken, shredded red cabbage and cheese. 
  3. Consume. 

I found 3 tacos made for a pretty filling meal while my dining partner ate 4 to be satisfied. Best part is the leftovers. So many leftovers to pull out of the fridge and assemble in no time flat.
